Boca Raton: CRC Press, Taylor & Francis Group, 2006. First Printing [Stated]. Hardcover. Very good. [12], 313, [3] pages. Illustrations. References. Index. This book was written to introduce "the world of the soybean" with respect to tis myriad health benefits. The editor was not aware of any book in English devoted to the study of soybean, written fully or mostly by Japanese. As many varieties of soybean products have been consumed for many years in East Asia, much knowledge has been accumulated there documenting the health benefits of these products. Japan may be the most experienced country in the use of soybean in fermented foods. It seemed appropriate to publish a volume in English dealing with soybean as a source of functional and healthy foods. This book includes several topics that are characteristically studied in Japan. The editor is convinced that the contributors are among the best experts in their fields. This book encompasses all aspects of soybean from a viewpoint of health benefits. East Asia has been consuming and enjoying the associated health benefits of the soybean (this versatile proteinaceous legume) for centuries. The Japanese in particular have devoted much energy to revealing the science of this oil-rich bean. The Fuji Foundation for Protein Research was established to support soybean studies, which have resulted in a considerable amount of profound literature on the soy-wellness connection. Soy in Health and Disease Prevention, edited by the distinguished Michihiro Sugano, presents the latest findings concerning this powerful health aid. Perhaps the most authoritative book on the subject available in any language, Soy in Health and Disease Prevention presents the very latest health and nutrition research and findings on soy products. Functional food experts from Japan, as well as other parts of the world, explore the diverse health effects of the common soybean. This book is essential reading for all researchers and students involved with the study and production of functional foods. Dr. Sugano, the current director of the Fuji Foundation, has published over 400 particles, as well as 80 book chapters. His primary area of research is in food functional factors, predominantly regulation of lipid metabolism., CRC Press, Taylor & Francis Group, 2006, 3, paperback. Good. Soybean is distinctive in that it has a high content of isoflavones which allegedly diminish the risk of cancer, cardiovascular disease, and osteoporosis, and also alleviate menopausal symptoms. Besides isoflavones, soybean also produces protease inhibitors, Lectins, and antifungal proteins, which have important biological activities. Lectins are abundant carbohydrate-binding proteins that are widely distributed but of uncertain function in plants. Lectins of leguminous seeds are among the most extensively studied of the plant Lectins. Lectins are glycoproteins consisting of subunits with molecular masses in a range of 25 to 35 kD arranged as dimers or tetramers. Lectins are particularly abundant in the seeds of legumes. The abundance of plant Lectins and the variety of carbohydrate specificities found among them have led to their widespread use for such purposes as the Isolation and analysis of complex carbohydrates, cell separation, and studies of cell surface architecture 60 pp. Englisch, Books<
